Gelatin is a multifunctional, clean-label protein derived from the partial hydrolysis of collagen sourced from bovine, porcine, poultry, or fish origins. It is a highly functional protein with diverse applications across the pharmaceutical, food, and broader industrial sectors.
Its versatile technological properties include binding, emulsifying, gelling, thickening, film formation, foam stabilization, fat replacement, texturizing, and adhesive capabilities. From a compositional standpoint, gelatin consists of three amino acid chains forming a stable triple helix. It contains 18 amino acids, including 8 of the 9 essential amino acids required by the human body, and is especially rich in glycine, proline, and hydroxyproline—together comprising nearly 50% of its molecular structure. These characteristics make gelatin not only fully digestible but also functionally relevant for applications targeting joint, skin, and connective tissue health
